Specialty coffee is considered a "semi-essential necessity," strictly speaking, it's a product for sensory enjoyment. The "true essential necessity" is more like commercial coffee! Even in my sales experience, I occasionally hear customers say: "I'll save the expensive, aromatic coffee for weekends or when I have visitors; I'll just drink the affordable kind on weekdays!"
Recent news reports have been discussing "low birth rate, high housing prices, inflation, low marriage rate..." So where are young people spending their money?
Let's look at it from another angle. In today's economic climate, if most office workers get married, raise children, buy houses, or spend money on further education... who will buy our specialty coffee?
This is a question worth pondering! Of course, there are still retirees, people who enjoy life, and high-income earners who appreciate a certain lifestyle, but there are definitely fewer hardworking members of society, new parents, and those burdened with mortgages who say, "Even when busy, I must drink better coffee!" to support them!

Talking about brewing
A few days ago, four customers came in. Two of them came in alone and asked me to recommend a hand-drip coffee. I started by talking about how amazing this year's Panama Emerald Geisha Wash was. Then a couple from Singapore came in and, after finding a seat, also heard my sharing. So, they ordered a total of four Esmerald Green Label coffees!
I brewed the first two cups separately. My go-to grinder for pour-over this season is a Fuji. After brewing, I usually taste it and serve it to the guests if there are no problems. Then, for the two cups from the Singaporean couple, because I was worried about the Fuji beans getting stuck, I switched to an EK43 grinder. After brewing, I tasted it as usual. I don't recall any significant difference between the two grinders, but of course, that doesn't apply to every bean! So I didn't expect any difference. But surprises always happen unexpectedly. I didn't expect the Geisha Flower aroma from the EK grinder to be so strong. I was stunned! I quickly served the cups as if nothing had happened.
The top-of-the-line machine is performing as expected.

Lately, when I'm meeting with visitors from Europe and America, the question I most often ask is, "Do you add sugar to your espresso when you drink it near your home in the morning?"
I used to think that the differences were usually just regional or personal habits!
Final summary~
In today's specialty coffee era, the decision to add sugar often depends on the bean grade, including specialty commercial beans, light roast level, and whether it's labeled as specialty coffee!
